Savory cheese and zucchini loaf
Ingredients for one cake :
3 eggs
150g whole floor
10g of baking powder
5g of baking soda
125 ml milk
80 ml olive oil
225g cheese of your choice
350g green zucchini
2 tablespoons olive oil
half purple onion
thym, cumin, salt pepper
Peel and chop the onion, cook it with 2 tablespoons of olive oil, medium heat, add zucchini diced, thym, cumin, cook for around 15 minutes, stir regularly. In a bowl, mix together eggs, flour, baking powder, baking soda, salt, pepper. Whisk until well combined. Whisk in milk and olive oil. Fold in cheese (granted or diced) and cooked zucchini.
Spread the batter in a loaf pan. Bake loaf for about 45 minutes, 355 degrees fahrenheit, or until golden and a knife inserted in center comes out with a few crumbs attached.
Cool for 10 minutes in the pan. Remove carefully and cool on wire rack. Keep it refrigerated and served at room temperature.
